Pineapple Coconut Red Curry

2 chicken breast
1 pineapple
27oz coconut milk
2 red chilies
1 bunch green onion
2 tbs fresh shredded ginger
3 tbs red curry paste
Dash of turmeric
2 tsp grated lemon grass
2 cloves garlic, minced
1 cup sliced mushrooms
2 tbs coconut oil
Salt

Brown chopped chicken in pan with coconut oil and salt. Add onions, garlic, mushrooms with chicken and sauté until soft. Then mix in a separate bowl part of the coconut milk with the red curry to help it blend into the sauce; then add to chicken mixture with rest of coconut milk, pineapple, chilies, ginger, turmeric and lemongrass. Simmer for 20 minutes or longer allowing spices and aromas to blend nicely. Serve over jasmine rice with fresh basil garnish.

Juice: Dew Drop

1 honeydew mellon
1tbs fresh ground ginger
12 ice cubes
32 oz water

Extract juice from mellon, then blend with ginger, ice and water. Enjoy!

Agua de Sandia

1 Small organic watermelon
1/8 Cup organic sugar
32oz Water
8 Ice cubes

Cut and blend watermelon with water, ice and sugar to enjoy a summer favorite.




Smoothie: Mellon Berry

9oz Blueberries
3.5oz Açaí berries & guarana frozen
1 Cucumber
3-5 Stalks celery
1 Cantaloupe
1/16 Cup ginger

Extract juice from cucumber, celery, cantaloupe then blend juice with blueberries, Açaí berry mix and ginger in a blender to make a refreshing smoothie.

Juice: Lemon, maple syrup, cayenne pepper detox

3 lemons
3 tablespoons of Maple syrup
3 teaspoons of Cayenne pepper
32oz water

Extract lemon juice also Extract from peel of 1/2 lemon. In blender mix lemon juice with water, maple syrup and cayenne pepper.




Smoothie: The Grapes wrath of Ginger

2 apples
5-6 stalks celery
5-6 carrots
1 bunch of grapes
1/8 cup fresh ginger
1/4 cup Liquid Chlorophyll

Extract juice from apples, celery, carrots and grapes. Mix ginger and chlorophyll in blender and mix until chopped finely, then add juice and enjoy.



Smoothie: Tropical Breakfast

1/2 pineapple
2 mangos
4 kiwi fruits
6 carrots
1 orange

Extract juice from carrots and orange, then blend juice with mangos, kiwi and pineapple to make tropical smoothie.

Smoothie: So Fresh

8oz frozen organic peaches
1/2 honeydew mellon
1/2 pineapple
40-60 leaves of baby spinach
18oz Coconut water
8 ice cubes

Extract juice from pineapple and mellon. In blender mix peaches, spinach, coconut water, ice cubes, and juice to enjoy this refreshing smoothie.



Smoothie: Spirulina Ginger Berry

2 apples
1 cucumber
4 stalks of celery
1/2 pint blueberries
1/8 cup fresh shredded ginger
1 heaping tablespoon spirulina powder
8 ice cubes

Extract juice from apples, cucumber, celery. Blend blueberries, ginger, spirulina, ice and juice into a refreshing green smoothie.





Smoothie: Star Fruit Fantasy

2 ripe star fruits
2 bananas
2 apples
6 small sweet peppers
1 orange
8 ice cubes

Extract the juice from star fruit, apples, sweet peppers, and orange. Mix juice with banana and ice in blender, enjoy.





Smoothie: Apricot kicker

9 Apricots
2 Asian Pears
1/2 Honeydew Mellon
18oz coconut water
Pinch of fresh spearmint

Extract juice from pears, and mellon. Blend juice with apricots, coconut water and mint into light refreshing smoothie.





Juice Fasting

In case you haven't noticed, I started this blog with smoothies. That is because I am on a juice fast. I just started and my schedule is listed below.

I'm enjoying a variety of fruits and vegetables and its reminding me of how healthy and light it is sometimes to flush your system, in this case with a massive amount of vitamins and minerals from fresh juiced and purée fruits and veggies, making it very easy for the system to absorb the benefits.

I have purchased organic produce, much of it local. In addition have added some natural supplements like aloe juice, blue green algae, liquid chlorophyll, and ginseng to my juice and smoothie recipes.

Day 1: a day of transition, smoothies one with dairy, coffee and a bowl of tomato soup.

Day 2: 2nd day of transition, coffee, smoothies w/o dairy. And just juice introduced.

Day 3: No coffee, tea instead. Just juice no smoothies.

Day 4: Tea, just fresh Juice, and lemon water with maple syrup and Cayenne pepper.

Day 5: No tea, Lemon water with maple syrup and cayenne pepper.

Day 6: No tea, Lemon water with maple syrup and cayenne pepper.

Day 7: Tea, just fresh Juice, and lemon water with maple syrup and Cayenne pepper.

Day 8: Tea, fresh Juice and smoothies w/o dairy.

• note you should drink one 8oz glass of water after each glass of juice, smoothie or lemon water mixture to ensure proper hydration and flushing.

Smoothie: Mexican style veggie

3 Avocados
3 Tomatillo
3 Tomatoes
3 Stalks of celery
4-5 mini colored sweet peppers
4-6 red radishes
1 Jalapeño
1/4 lemon
Cayenne pepper and salt to taste.

Extract the juice from tomatillos, tomatoes, celery, peppers, radishes in juice extractor. Blend juice with avocados, lemon, salt and pepper to taste.







Smoothie: Strawberry chocolate cream top

2 cups Brown Cow maple cream top yogurt
2 bananas
6-9 strawberries
1/3 cup chocolate powder
8 ice cubes

This smoothie is creamy smooth with simple goodness. Blend ingredients and enjoy.

Smoothie: Açaí Berry Breeze

3.5oz Açaí berries & guarana frozen purée
2 bananas
1 pint fresh blueberries
1/4 lemon
1 1/2 cup coconut water
1/2 cup aloe juice

Blend ingredients and enjoy!



Smoothie: Rabbit Mellon

4-6 Carrots
1-2 Beets
1 Cantaloupe
6-9 Strawberries

Using a juicer, extract carrot and beet juice. In a blender mix cantaloupe and strawberries with juice. Blend and enjoy.
