Tonight’s dinner was inspired by the saffron chicken and rice I used to get at a Persian restaurant in Albuquerque. I wasn’t trying to make an exact copy, but I wanted that same combination of fragrant saffron, savory chicken, buttery rice, and just enough citrus to brighten everything up.
It turned out subtle, savory, and ridiculously good.
Saffron Chicken
- Boneless or bone-in chicken thighs
- Saffron threads
- Hot water
- Lime
- Onion
- Garlic
- Olive oil
- Salt
- Black pepper
- Turmeric
- A little butter for finishing
Bloom a generous pinch of saffron in a small amount of hot water and let it sit until the water turns a deep golden-orange.
Buttered Raisins & Almonds
While the rice is cooking, melt 2 tablespoons of butter in a small skillet over medium-low heat. Add ½ cup sliced or slivered almonds and toast gently, stirring frequently, until they begin to turn golden and smell nutty.
Add ½ cup raisins and stir them into the butter and almonds. Cook for another 1–2 minutes, just until the raisins warm and begin to plump. Remove from the heat before the almonds get too dark.
When the saffron rice is finished, gently fold about half of the buttered raisins and almonds into the rice. Spoon the remaining mixture over the top just before serving for a sweet, buttery crunch against the savory saffron chicken.
Cooking the Chicken & Onions
Heat a little olive oil in a large skillet over medium-high heat. Add the marinated chicken thighs and sear them first, letting them develop a deep golden-brown color on both sides. Remove the chicken from the pan and set it aside.
In the same pan, add the sliced onions and cook them in all those flavorful browned bits left from the chicken. Once the onions begin to soften, add turmeric and stir well, letting it bloom in the oil and coat the onions. Cook until the onions are soft, golden, and fragrant.
Return the browned chicken to the pan, nestling it into the turmeric onions. Add the saffron mixture and any remaining marinade or juices, then cover and continue cooking until the chicken is tender and cooked through. Spoon the saffron-onion juices over the chicken as it cooks.
Let it marinate if you have time.
Cook the chicken until deeply browned and cooked through, spooning the juices and saffron mixture over it as it cooks. Finish with a little butter and another splash of the saffron water.
Saffron Rice
- Basmati rice
- Water
- Salt
- Butter
- Remaining bloomed saffron
Rinse the basmati rice well until the water is mostly clear. Cook until the grains are tender but still separate.
Toward the end of cooking, pour the remaining saffron water over part of the rice rather than stirring it completely through. Add a little butter, cover, and let it finish steaming. Gently fluff so you keep some of those beautiful white-and-gold variations.
Serve the saffron chicken with the rice and spoon a little of the savory chicken juice over the top.
The lime worked beautifully here. It doesn’t make the dish taste “limey”—it just gives the rich chicken and saffron a little lift.
